How it works
You want half a beef. You do not want 200 pounds landing on one afternoon, and you may not own a chest freezer. So we split it into four: 1/8 beef, also called a 1/8 cow, 50 pounds every three months. Four eighths make the half.
Here is a year, if you reserve in January.

You pay $700 when you reserve. That is your first delivery. Each delivery after that is $700, charged the week it ships. Shipping is added at checkout. Reserve any other time of year and your four start with the next harvest on the calendar: reserve in June, and your year runs August, November, February, May.
What you get
What is 1/8 beef? One eighth of the animal, also called a 1/8 cow or an eighth share: 50 pounds packaged, with steaks, a roast, patties and ground beef in the same proportion as the whole animal. Every delivery is the same list, cut the way the animal comes. Not custom cut.

One harvest, one cow
Every delivery comes from one specific harvest and one specific cow. It goes to our USDA inspected Kansas locker, hangs 21 days confirm with Marty, gets cut and frozen, and ships the same week. Fresh beef every three months, cut and frozen the week it came off the rail.
The ranch
Fourth generation, brand established 1998. Every animal is born, raised and finished on the ranch: grass fed on our own pasture, grain finished on corn and oats. No added hormones. Raised without antibiotics. One ingredient.

When it comes
The dates follow the cattle, not the calendar. Four times a year we take a harvest to the locker for the Harvest Half, and every delivery that cycle comes from it. That is why the months are fixed: your beef is cut and frozen the week it comes off the rail and ships that week, every time.
