Why an eighth

Half a beef, without half a freezer.

Families in Florida, Colorado and Connecticut asked us for half a beef and could not take 215 pounds at once. A half needs a chest freezer and a whole afternoon. So we split it: an eighth of a beef, 50 pounds, four times a year. By the fourth delivery you have had half a beef, and it never overflowed the freezer.

Why "harvest"

Beef from a harvest you can name.

Every delivery comes from one specific harvest. The animals go to our USDA inspected Kansas locker, hang about 16 days, get cut and frozen, and ship the same week. Nothing sits in a warehouse waiting for an order. That is the difference between this and a meat box.

What you get

What 50 pounds of beef looks like.

This is our Diamond R Cut, the one most quarter and half families pick. A quarter makes two eighths. Everything on the quarter that splits evenly is in every delivery. The cuts a quarter only has one of, the brisket, the flank or skirt steak, the rump roast and the sirloin tip roast, take turns, so every delivery carries one of them and four deliveries add up to the half. Not custom cut.

How much beef is that

About 4 pounds a week.

Fifty pounds every three months is about 17 pounds a month. For a family of four at a pound and a half a meal, that is roughly 33 beef dinners per delivery, nearly three a week, with steaks for the weekend and ground for the weeknights.

It takes about 1.5 cubic feet of freezer, which is the freezer on top of your refrigerator. A half beef at once needs about 8 cubic feet, a chest freezer. The Harvest Half does not.

Each delivery is packed frozen in two insulated boxes confirm packing. We propose shipping Monday or Tuesday so a box never sits over a weekend proposed. In warm months it goes 2-day. In cold months it can go ground where that is safe. confirm months

How much is half a cow?

How much beef is an eighth of a cow?

How much freezer space do I need?

About 1.5 cubic feet per delivery, which is the freezer on top of most refrigerators. Plan 1 cubic foot for every 35 to 40 pounds of beef.

Is it custom cut?

No. The Harvest Half is one set list, cut the way our quarter is cut, so every delivery is the whole animal in proportion.

Can I pause, skip or cancel?

Yes, anytime, from your account. One thing to know: a skipped delivery means that harvest's eighth goes to someone else. There is no make-up box.

When exactly does it ship?

Every three months, timed to a harvest. We email your ship week when your animal goes to the locker, about three weeks ahead, and you can move it if the week does not work.

What if I am not home?
